INGREDIENTS
400g bread flour
2 bananas
40g sugar
1tsp cinnamon
30g oats
7g fast action yeast
100ml warm water
METHOD
1. Preheat the oven to 180oc
2. In a bowl, mash the bananas with the cinnamon, sugar, oats and sugar then ad the flour.
3. Make a well in the flour then add the water and bring together (depending on the size and ripeness of your bananas you could need more or less water)
4. Knead the dough until it is just combined. Don’t overwork the dough or your loaf will be dense and chewy instead of light.
5. Lightly oil a loaf tin then transfer the dough to the tin and leave to prove until at least double in size
6. Bake your loaf for 30 minutes. Once done allow to cool then slice
Serve and enjoy : ) x

I am lucky enough to have grown up with a variety of influences, my mum is from Zimbabwe, my dad is from Ghana and I grew up in a village in the North West, so food has always been a blend and balance of cultures for me.
From being little, food has played a large part in our family, whether it be for celebrations, commiserations or comfort. I began helping out in the kitchen from a young age and was fortunate enough to be given the reigns on occasion from the age of 11.
I love being in the kitchen and having the opportunity to create something to make others smile. Whether it be an autumnal main or a gooey dessert :)
I am a total believer in happy eating. Food should put a smile on your face no whether it's a weekday, after work dinner or a special occasion. I love following recipes and do think it is sometimes a necessity but I also think that food should be personal and geared towards what you like and I hope this comes across in my blog.
