Roasted butternut squash
I got asked by a few of you lovely lot how to roast the perfect squash so decided to share my methods 🙂 This is the way I always do mine to get a little crispy edge but soft squash every time!

All you need is:
Squash
Knife
Roasting dish
Spray oil
1. Preheat your oven to 180oc. Peel then deseed your squash and slice into centimeter thick slices.Â
Make sure you save the seeds, I’ve got a nifty trick!

2. Layer your slices so they overlap slightly.
This is important as it creates steam between the layers creating soft squash.
3. Spray with a light coating of oil then bake for 40 minutes.

4. With the seeds, layer onto a baking tray in one layer, season with salt, oregano and chilli flakes then bake with the squash for the last 15 minutes.
Work great as a snack, in a salad or on soup for contrast in texture!
Serve and enjoy : ) x

I am a total believer in happy eating. Food should put a smile on your face no whether it's a weekday, after work dinner or a special occasion. I love following recipes and do think it is sometimes a necessity but I also think that food should be personal and geared towards what you like and I hope this comes across in my blog.
