250g lean steak mince
2 cloves garlic
1 large onion
1 punnet of mushrooms 
1 pepper, de-seeded 
1 small bag spinach
1 vegetable stock cube
1 carton passata 
Salt and pepper to season

1. In a non stick pan, break up your mince with a wooden spoon and cook on a low heat
2. Dice the onions and finely chop the garlic before adding to the mince when the majority is brown
3. Dice the remainder of the vegetables making sure they are a similar size then add to the mince cooking for 5 minutes until softened (if you have veggie-phobes in the house, blend the veg into a smooth purée before cooking down)
4. Add the passata, stock cube, a tea spoon of oregano and season. Turn the heat up and allow the bolognese sauce to simmer for 15minutes with a lid on
5. Prepare pasta for 2 minutes less than as stated on the packet then drain
6. Add the spinach to the cooked pasta and stir in the bolognese sauce, taste and add more salt and pepper of needed. Give the combined dish another 2 minutes on the heat to allow the pasta to soak up the sauce

Grate over some cheese and enjoy : ) x

Food should put a smile on your face no whether it's a weekday, after work dinner or a special occasion. I love following recipes and do think it is sometimes a necessity but I also think that food should be personal and geared towards what you like and I hope this comes across in my blog.
