500g sausage meat (I used pork and leek)
50g dried cranberries
6 rashers streaky bacon
8 sprigs of thyme
Black pepper to season

1. Preheat the oven to 190oc
2. Finely chop the cranberries
3. In a bowl, mix the sausage meat with the cranberries and some black pepper
4. Spread out your bacon on a sheet of cling film (I find this helps with the rolling process)
5. With your fingers, gently spread out the bacon until it’s roughly double the width then spoon a good helping of the sausage mixture onto one end
6. Tightly roll the mixture in the bacon and skewer with the sprigs of time to secure
7. Sprinkle with the leftover thyme leaves and sear in a hot frying pan to help hold them together and add colour
8. Cover with tinfoil then bake for 30 minutes in the oven
8. Pull the parcels out and remove the tinfoil before popping back in the oven for a further 10 minutes to go golden brown and crispy up on the outside

Food should put a smile on your face no whether it's a weekday, after work dinner or a special occasion. I love following recipes and do think it is sometimes a necessity but I also think that food should be personal and geared towards what you like and I hope this comes across in my blog.
