INGREDIENTS – serves 2
250g white fish (I use halibut)
100g plain flour
10g cornflakes
1 tsp sea salt 
1tsp black pepper
1 tsp each of oregano
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1/2 tsp chili powder
1/2 tsp cayenne
Pinch of sugar 
Oil spray ( I use fry light)

1. Pre-heat your oven to 180oc
2. Dice the fish into bite sized pieces
3. Crush the cornflakes until small shards remain
4. Mix all your herbs and spices with the flour and cornflakes in a food bag (you know how I feel about washing up)
5. Put your fish in the food bag and shake gently to coat
6. Place the fish on a non-stick baking tray and spray lightly with an oil spray to help get the crunch
7. Bake for 20 minutes
8. Serve with sliced red cabbage, courgette and a chilli and lemon mayo

Food should put a smile on your face no whether it's a weekday, after work dinner or a special occasion. I love following recipes and do think it is sometimes a necessity but I also think that food should be personal and geared towards what you like and I hope this comes across in my blog.
